Quick & Easy Blackberry-Tomato Blue Cheese Salad





Lunch wasn't looking very promising today as I scavenged around the fridge for something to make real fast before meeting a friend. I saw a tub of blackberries in the fridge and thought, Oh, if only those were proper enough to eat as a meal! Immediately I began envisioning myself sitting on a sunny patio, eating a decadent salad topped with fat, juicy blackberries. So, despite the cold and overcast weather outside, I decided to make myself a quick little salad with the blackberries. It was so easy and fresh that I thought to share it on the blog, in case you're in a slump for healthy eating or quick personal meals to make on the go.

Salad:
  • Two cups spinach or mixed greens (I used half romaine/half spinach)
  • 8 cherry or grape tomatoes, sliced in half
  • 10 blackberries
  • Crumbly blue cheese
Dressing:
  • One part extra virgin olive oil
  • One part red wine vinegar
  • One part grainy Dijon mustard
  • A few splashes of lemon juice
The Quick & Easy:
  1. Wash and tear up your mixed greens. Throw on top your blackberries, blue cheese, and halved tomatoes.
  2. In a separate bowl, mix together your salad dressing. I like a lot of dressing so I made a generous batch.
  3. Drizzle your dressing on top of your greens and chow down!
